Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter chilled and cubed
  • ½ cup granulated sugar
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 large egg yolk
  • 4-6 tbsp ice water
  • 6 cups apples peeled, cored, and sliced
  • ¾ cup granulated sugar
  • 2 tbsp lemon juice
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 tbsp all-purpose flour
  • 1 tbsp butter cut into small pieces
  • 1 cup rolled oats
  • ½ cup packed brown sugar
  • ½ cup all-purpose flour
  • ½ cup unsalted butter melted
  • 1 tsp ground cinnamon
  • ½ cup chopped pecans or walnuts optional

Instructions
 

  • In a large mixing bowl, whisk together the flour, granulated sugar, and salt.
  • Add the chilled, cubed butter and blend until the mixture resembles coarse crumbs.
  • Stir in the vanilla extract and egg yolk, then gradually mix in the ice water until the dough comes together.
  • Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat your oven to 375°F (190°C).
  • In a separate bowl, combine the sliced apples with lemon juice, granulated sugar, ground cinnamon, ground nutmeg, and flour.
  • Roll out one disc of dough to fit a 13x18-inch baking sheet and transfer it to the sheet.
  • Evenly distribute the apple mixture over the prepared crust and dot with small pieces of butter.
  • In a medium bowl, combine the rolled oats, brown sugar, flour, melted butter, ground cinnamon, and chopped nuts, mixing until crumbly.
  • Sprinkle the topping evenly over the apple filling and bake for 35-40 minutes until golden brown.
