Ingredients
  

  • 4 large flour tortillas
  • 6 strips bacon
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • ½ cup diced bell peppers
  • ¼ cup chopped green onions
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil or butter
  • to serve salsa or hot sauce

Instructions
 

  • Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes, then crumble.
  • Whisk the eggs in a bowl, season with salt and pepper, and fold in bell peppers and green onions if using.
  • Scramble the eggs in the skillet with some bacon grease or olive oil until set and fluffy, about 3-4 minutes.
  • Lay out two tortillas and divide the scrambled eggs, bacon, and cheese between them.
  • Top with the remaining tortillas to form two quesadillas.
  • Heat the skillet, add oil or butter, and cook each quesadilla for 3-4 minutes per side until golden brown.
  • Remove from skillet and let cool for a minute before slicing into wedges.
  • Serve warm with salsa or hot sauce on the side.
