Ingredients
  

  • 1 pound ground beef
  • ½ cup breadcrumbs
  • ½ cup grated cheddar cheese
  • ¼ cup chopped fresh cilantro
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup enchilada sauce
  • 1 egg
  • ¼ cup chopped onion
  • ¼ cup chopped bell pepper
  • 1 jalapeno pepper
  • 1 can 10 oz enchilada sauce

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Combine the ground beef, breadcrumbs, cheddar cheese, cilantro, cumin, smoked paprika, cayenne pepper, salt, and black pepper in a large bowl.
  • Add the egg, onion, bell pepper, and jalapeno to the bowl and mix until just combined.
  • Shape the mixture into meatballs, about 1 ½ inches (3.8 cm) in diameter.
  • Place the meatballs on a baking sheet lined with parchment paper, leaving a little space between each meatball.
  • Drizzle the meatballs with ¼ cup of enchilada sauce and gently roll them to coat evenly.
