  • 2 pieces ripe bananas
  • 1 cup rolled oats
  • ½ cup almond flour
  • ¼ cup honey or maple syrup
  • ¼ cup peanut butter or almond butter
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup dark chocolate chips or chopped walnuts
  • ¼ cup chopped dried fruits

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the mashed bananas, honey (or maple syrup), and nut butter until smooth.
  • In another bowl, whisk together the rolled oats, almond flour, baking powder, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the chocolate chips or walnuts and any dried fruits if using.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  • Press down each cookie slightly with the back of a spoon.
