  • cup melted unsalted butter
  • 1 teaspoon baking soda
  • a pinch salt
  • ¾ cup granulated sugar
  • 1 large egg well-beaten
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon ground cinnamon
  • ½ cup rolled oats
  • ¼ cup chopped walnuts optional
  • ¼ cup all-purpose flour for crumb topping
  • ¼ cup packed brown sugar
  • ¼ cup rolled oats for crumb topping
  • 2 tablespoons cold unsalted butter cut into small cubes
  • ½ teaspoon ground cinnamon for crumb topping

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  • Blend melted butter with mashed bananas until smooth.
  • Add baking soda and salt, stirring until incorporated.
  • Mix in granulated sugar, beaten egg, and vanilla extract until combined.
  • Fold in flour, ground cinnamon, rolled oats, and walnuts until just combined.
  • Prepare crumb topping by whisking flour, brown sugar, rolled oats, and cinnamon, then mix in cold butter until crumbly.
  • Divide muffin batter among muffin cups, filling each about two-thirds full.
