  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon fresh lime juice

  • 1 pound fresh salmon fillet
  • ½ cup cornstarch
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ cup vegetable oil
  • 2 cups cooked jasmine rice
  • 1 cup shredded cabbage
  • ½ cup thinly sliced cucumber
  • ½ ripe avocado sliced
  • ¼ cup finely chopped green onions
  • to taste sesame seeds
  • to taste fresh cilantro

Instructions
 

  • Prepare the Bang Bang Sauce by mixing mayonnaise, sweet chili sauce, sriracha, lime juice, salt, and pepper in a bowl.
  • Coat the salmon bites by mixing cornstarch, garlic powder, onion powder, salt, and pepper in a separate bowl.
  • Toss the salmon cubes in the cornstarch mixture until evenly coated.
  • Heat vegetable oil in a skillet over medium-high heat and fry the salmon bites for 2-3 minutes on each side until golden brown.
  • Remove the salmon bites and place them on a paper towel-lined plate to absorb excess oil.
  • Assemble the bowls with a base of jasmine rice or quinoa, then layer with cabbage, cucumber, avocado, and salmon bites.
  • Drizzle the Bang Bang sauce generously over each bowl.
