Ingredients
  

  • 4 large flour tortillas
  • 1 cup fresh blueberries
  • 1 cup creamy ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons honey
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • powdered sugar
  • maple syrup

Instructions
 

  • Combine ricotta cheese, honey, vanilla extract, and ground cinnamon in a bowl until smooth.
  • Spread half of the ricotta mixture on two tortillas, reaching the edges.
  • Top with half of the blueberries and half of the mozzarella cheese on each tortilla.
  • Place another tortilla on top of each filled tortilla to form quesadillas.
  • Melt 1 tablespoon of butter in a skillet over medium heat and add one quesadilla.
  • Cook for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes.
  • Remove from skillet and cool for a minute before slicing into wedges.
  • Repeat cooking for the second quesadilla, adding more butter as needed.
  • Serve warm, optionally dusted with powdered sugar and drizzled with maple syrup.
