  • 2 cups finely grated carrots
  • 1 cup pitted Medjool dates chopped
  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans
  • ½ cup raisins
  • 1 zest orange

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan.
  • Combine grated carrots and chopped dates in a large mixing bowl.

  • In another bowl, mix the oil, eggs, vanilla extract, and orange zest until smooth.

  • Pour the batter into the prepared cake pan and smooth the top.
