- 1 large head cauliflower
- 2 tablespoons unsalted butter
- ½ cup Gruyère cheese
- ½ cup Parmesan cheese
- ¼ cup all-purpose flour
- 1 cup heavy cream
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 cloves garlic
- ¼ cup chopped fresh parsley
- ½ cup breadcrumbs
Preheat the oven to 375°F (190°C).
Blanch the cauliflower florets in boiling salted water for 5 minutes, then drain and set aside.
Make a roux by melting butter and whisking in flour, cooking for 1-2 minutes.
Create the cheese sauce by slowly pouring in heavy cream, whisking continuously, and cooking until thickened.
Combine the cheese and sauce by stirring in Gruyère, Parmesan, salt, pepper, and garlic until melted and smooth.
Assemble the gratin by arranging blanched cauliflower in a single layer in a greased 9x13-inch baking dish.
Pour the cheese sauce over the cauliflower, making sure all florets are coated.
Sprinkle parsley and breadcrumbs over the top of the cauliflower.
Bake the gratin in the preheated oven for 25-30 minutes, or until the top is golden brown and the sauce is bubbly.
