Ingredients
  

  • 2 cups cooked white or brown rice
  • 2 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can cream of mushroom soup
  • ½ cup milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • ½ cup breadcrumbs
  • 2 tablespoons butter

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter.
  • In a large mixing bowl, combine the cooked rice, broccoli, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper.
  • Mix thoroughly until all ingredients are well incorporated.
  • Gently fold in half of the cheddar and mozzarella cheese into the mixture.
  • Transfer the mixture into the prepared baking dish, spreading it evenly.
  • Top with the remaining cheddar and mozzarella cheese.
  • If desired, sprinkle breadcrumbs over the cheese layer.
  • Bake for 25-30 minutes until the cheese is bubbly and golden brown.
  • Remove from the oven and let cool for a few minutes before serving.
