Ingredients
  

  • 20 pieces jumbo pasta shells
  • 1 pound ground beef or ground turkey
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1 cup black beans drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • fresh cilantro chopped
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Bring a large pot of salted water to a boil and cook the jumbo pasta shells until al dente. Drain and set aside.
  • In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  • Add diced onion and minced garlic to the skillet and sauté until the onion is soft.
  • Stir in taco seasoning, black beans, corn, and half of the salsa. Cook for an additional 3-4 minutes.
  • Spread a thin layer of salsa in a baking dish. Stuff each pasta shell with the taco mixture and place seam side up in the dish.
  • Pour remaining salsa over the shells and sprinkle with shredded cheddar cheese.
  • Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes.
  • Let cool for a few minutes before serving with sour cream and chopped cilantro.
