Ingredients
  

  • 1 lb boneless skinless chicken breast or thighs
  • 2 medium carrots
  • 2 medium potatoes
  • 1 large onion
  • 3 cloves of garlic
  • 1 can 14.5 oz diced tomatoes
  • 1 can 15 oz chickpeas
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • Salt and pepper
  • 2 tbsp olive oil
  • Fresh parsley

Instructions
 

  • Heat olive oil in a large pot over medium heat and cook the chopped onion until softened.
  • Add the minced garlic and cook for another minute, until fragrant.
  • Add the chopped carrots and potatoes, cook for 5 minutes, stirring occasionally.
  • Add the chicken to the pot, cook until browned on all sides, about 5-7 minutes.
  • Add the diced tomatoes, chickpeas, chicken broth, thyme, and rosemary, season with salt and pepper to taste.
  • Bring the mixture to a boil, then reduce the heat to low and let simmer for 20-25 minutes, or until the vegetables are tender.
  • Serve hot, garnished with chopped fresh parsley if desired.
