Ingredients
  

  • 2 cups cooked rice
  • 1 pound boneless skinless chicken breasts
  • 1 can enchilada sauce
  • 1 can black beans
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste salt and pepper
  • ¼ cup chopped fresh cilantro
  • optional sliced jalapeños
  • optional sour cream
  • optional avocado slices
  • optional lime wedges

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Season the chicken breasts and cook until fully cooked, then shred.
  • In a bowl, mix rice, shredded chicken, enchilada sauce, black beans, corn, tomatoes, and half of the cheese.
  • Pour the mixture into a greased 9x13 inch casserole dish.
  • Top with the remaining cheese.
  • Cover with foil and bake for 25 minutes, then uncover and bake for another 10-15 minutes.
  • Let cool for a few minutes before garnishing with cilantro and optional toppings.
  • Serve warm and enjoy.
