Ingredients
  

  • 1 lb boneless skinless chicken breast or thighs
  • 2 medium onions
  • 2 large bell peppers
  • 2-3 fresh green chilies
  • 2 cloves garlic
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon curry powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • ½ teaspoon garam masala powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 2 medium tomatoes
  • 2 tablespoons tomato puree
  • 1 tablespoon lemon juice
  • fresh cilantro

Instructions
 

  • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat and cook the chicken until browned and cooked through.
  • Add the remaining 1 tablespoon of oil and cook the sliced onions until lightly browned and caramelized.
  • Add the sliced bell peppers and cook for an additional 2-3 minutes until they start to soften.
  • Add the sliced green chilies, minced garlic, and grated ginger to the skillet and cook for 1 minute until fragrant.
  • Stir in the cumin, curry powder, turmeric, red chili powder, garam masala, salt, and pepper, and cook for 1 minute until the spices are fragrant.
