Ingredients
  

  • 1 ½ pounds boneless skinless chicken breast or thighs
  • 2 cups mixed mushrooms
  • 2 tablespoons butter
  • 1 medium onion
  • 2 cloves garlic
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 teaspoon dried thyme
  • salt and pepper
  • fresh parsley

Instructions
 

  • Cook the chicken in a large skillet with 1 tablespoon of butter over medium heat until browned and cooked through.
  • Sauté the mushrooms in the same skillet with the remaining 1 tablespoon of butter until they release their liquid and start to brown.
  • Soften the onion and garlic in the skillet until the onion is translucent.
  • Add the dried thyme to the skillet and cook for 1 minute.
  • Pour in the heavy cream and chicken broth, and bring the mixture to a simmer.
  • Reduce the heat to low and let the sauce simmer for 2-3 minutes, or until it thickens slightly.
