Ingredients
  

  • 12 oz rotini or fusilli pasta
  • 1 cup cherry tomatoes halved
  • 1 cup corn kernels
  • 1 cup black beans rinsed and drained
  • ½ red bell pepper diced
  • ½ cup red onion finely chopped
  • ½ cup fresh cilantro chopped
  • ¼ cup extra virgin olive oil
  • 2 limes zest and juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste
  • 1 avocado diced (optional)

Instructions
 

  • Cook the pasta in salted boiling water until al dente, then drain and rinse with cold water.
  • In a small bowl, whisk together olive oil, lime zest, lime juice, garlic powder, cumin, salt, and pepper.
  • In a large bowl, combine cooled pasta, cherry tomatoes, corn, black beans, red bell pepper, red onion, and cilantro.
  • Drizzle the dressing over the pasta mixture and toss gently to coat.
  • Cover and chill in the refrigerator for at least 30 minutes.
  • If using, fold in diced avocado just before serving.
  • Serve chilled or at room temperature, garnished with cilantro or lime wedges.
