  • 1 lb boneless skinless chicken breast, cut into bite-sized pieces
  • 1 cup freshly squeezed orange juice
  • 1 medium orange zest
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water slurry
  • 1 tablespoon olive oil
  • 2 cloves garlic finely minced
  • 1 teaspoon fresh ginger finely minced
  • 1 medium red bell pepper cut into thin strips
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Cooked brown rice or quinoa for serving
  • Chopped green onions and sesame seeds for garnish

Instructions
 

  • In a medium mixing bowl, combine orange juice, orange zest, soy sauce, honey, rice vinegar, and cornstarch slurry. Whisk until blended.
  • Heat olive oil in a large skillet over medium-high heat. Add minced garlic and ginger, sauté for 30 seconds until fragrant.
  • Add diced chicken to the skillet, season with salt and pepper. Cook for 5-7 minutes until browned and cooked through.
  • Add sliced red bell pepper and broccoli florets. Stir-fry for 3-4 minutes until vegetables are tender yet crunchy.
