  • 2 cups all-purpose flour
  • 1 cup unsweetened shredded coconut
  • ½ cup granulated sugar
  • ½ cup coconut milk
  • ¼ cup unsalted butter melted
  • 2 large eggs
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup powdered sugar for finishing
  • ¼ cup toasted coconut flakes for garnish

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine flour, shredded coconut, sugar, baking powder, and salt; whisk until blended.
  • In another bowl, whisk together coconut milk, melted butter, eggs, and vanilla until smooth.
  • Gradually add wet ingredients to dry ingredients, stirring gently until a soft dough forms.
  • Lightly flour a surface, knead the dough gently for 1 minute, then divide into 12 pieces.
  • Roll each piece into a rope, twist, and tie into a knot; arrange on the baking sheet.
  • Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  • Cool on the baking sheet for a few minutes, then dust with powdered sugar and sprinkle with toasted coconut.
  • Serve warm or at room temperature as a delightful snack.
