Ingredients
  

  • 1 pound flank steak
  • 2 medium zucchinis cut into half-moon slices
  • 1 cup quinoa cooked and fluffy
  • 1 medium red bell pepper chopped into small pieces
  • 1 cup cherry tomatoes halved
  • 1 ripe avocado sliced
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic finely minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • to taste salt and freshly ground black pepper
  • for garnish fresh cilantro leaves
  • for serving lime wedges

Instructions
 

  • In a mixing bowl, combine olive oil, minced garlic, smoked paprika, ground cumin, salt, and black pepper. Add flank steak and coat thoroughly. Marinate for at least 30 minutes.
  • Place sliced zucchini in a bowl, drizzle with olive oil, and season with salt and pepper. Toss to coat and set aside.
  • Preheat grill or grill pan to medium-high heat. Remove steak from marinade and grill for 4-5 minutes on each side for medium-rare. Let rest for 5-10 minutes before slicing.
  • Grill zucchini slices for 2-3 minutes on each side until tender and marked.
  • In a serving bowl, layer cooked quinoa, sliced grilled steak, grilled zucchini, diced red bell pepper, halved cherry tomatoes, and avocado slices.
  • Garnish with fresh cilantro and serve with lime wedges.

For best flavor, marinate the steak for up to 2 hours.
