Ingredients
  

  • 2 tablespoons butter
  • 1 medium onion
  • 3 cloves garlic
  • 2 cups fresh tomatoes
  • 1 cup chicken or vegetable broth
  • ½ cup heavy cream
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • salt and pepper
  • fresh basil leaves

Instructions
 

  • Sauté the onion and garlic in butter until the onion is soft.
  • Add the chopped tomatoes, broth, dried basil, and dried oregano to the pot and bring to a boil.
  • Reduce the heat and let the mixture simmer for 20 minutes.
  • Use an immersion blender to puree the soup until it's smooth.
  • Stir in the heavy cream and balsamic vinegar and let the soup simmer for another 5-10 minutes.
  • Season the soup with salt and pepper to taste.
  • Serve the soup hot, garnished with fresh basil leaves.

Notes

You can use canned diced tomatoes if fresh tomatoes are not available.
