Creamy Cheesy Chicken and Rice in the Instant Pot
This creamy and cheesy chicken and rice dish is a quick and easy weeknight dinner made in the Instant Pot. It's packed with flavor and perfect for the whole family.
Ingredients
- 1 lb boneless skinless chicken breasts
- 1 cup long-grain white rice rinsed
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 cup chicken broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 cup frozen peas and carrots
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon onion powder
- to taste salt
- to taste pepper
- for garnish fresh parsley chopped
Instructions
- Set the Instant Pot to Sauté mode and heat the olive oil.
- Season the chicken with salt, pepper, and paprika, then sear for 3-4 minutes on each side.
- Remove the chicken and sauté the onion and garlic for 2-3 minutes until translucent.
- Add the rinsed rice and chicken broth, stirring to combine.
- Place the chicken on top of the rice mixture, seal the lid, and cook on Manual for 10 minutes.
- Allow a natural pressure release for 10 minutes, then quick release any remaining pressure.
- Stir in the milk and cheddar cheese until melted and creamy, then add the peas and carrots.
- Shred the chicken and mix it back into the pot.
- Adjust seasoning with salt and pepper, and garnish with parsley before serving.
Notes
For extra creaminess, use heavy cream instead of milk.
