Ingredients
  

  • 1 pound boneless skinless chicken breast or thighs
  • 4 cups chicken broth
  • 1 medium onion
  • 2 cloves garlic
  • 2 medium carrots
  • 2 stalks celery
  • ½ cup heavy cream or half-and-half
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour

Instructions
 

  • Sauté the diced onion, minced garlic, diced carrots, and diced celery in butter until tender.
  • Add the chicken to the pot and cook until browned on all sides.
  • Pour in chicken broth and bring the mixture to a boil, then reduce the heat and simmer.
  • Remove the chicken from the pot and let it cool, then shred or chop it into bite-sized pieces.
  • Add the shredded chicken back into the pot along with heavy cream, dried thyme, salt, and black pepper.
