Instructions
Sauté the diced onion, minced garlic, diced carrots, and diced celery in butter until tender.
Add the chicken to the pot and cook until browned on all sides.
Pour in chicken broth and bring the mixture to a boil, then reduce the heat and simmer.
Remove the chicken from the pot and let it cool, then shred or chop it into bite-sized pieces.
Add the shredded chicken back into the pot along with heavy cream, dried thyme, salt, and black pepper.
Stir well to combine and let it simmer for a few minutes.
If desired, mix flour with a small amount of water to create a slurry and add it to the soup to thicken.
Taste and adjust the seasoning as needed, then serve hot.
