Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • 1 cup heavy cream
  • ½ cup basil pesto
  • 2 tablespoons olive oil
  • 3 cloves garlic finely minced
  • ½ cup freshly grated Parmesan cheese
  • Salt to taste
  • freshly cracked black pepper to taste
  • Fresh basil leaves for garnish
  • Optional: halved cherry tomatoes

Instructions
 

  • Season both sides of the chicken breasts with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat and sear the chicken for 6-7 minutes on each side until golden brown.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, sauté minced garlic for 1 minute until fragrant.
  • Pour in heavy cream and stir to combine with garlic, then add basil pesto and mix until smooth.
  • Stir in grated Parmesan cheese and let the sauce simmer for 3-4 minutes to thicken.
  • Return the chicken to the skillet, coating it in the sauce, and simmer for an additional 2-3 minutes.
  • Plate the chicken, drizzling extra sauce over the top.
  • Garnish with fresh basil leaves and optional cherry tomatoes before serving.
