Ingredients
  

  • 2 large cucumbers thinly sliced
  • ¼ cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar or honey
  • 1 teaspoon fresh ginger finely grated
  • 1 clove garlic minced
  • 1 teaspoon chili flakes
  • 2 green onions finely chopped
  • 1 tablespoon sesame seeds
  • to taste fresh cilantro leaves for garnish optional

Instructions
 

  • Wash the cucumbers under cold water, trim ends, and slice thinly.
  • In a bowl, combine rice vinegar, soy sauce, sesame oil, sugar, ginger, garlic, and chili flakes. Whisk until sugar dissolves.
  • In a large bowl, place sliced cucumbers and pour dressing over them. Toss gently.
  • Add chopped green onions and sprinkle sesame seeds over the salad. Toss lightly.
  • Let the salad rest for about 5 minutes to absorb flavors.
  • Serve chilled, garnished with cilantro leaves if desired.
