Ingredients
  

  • 10 sheets rice paper
  • 1 cup cooked thin rice noodles
  • 1 cup shredded carrots
  • 1 cup fresh bean sprouts
  • ½ cup thinly sliced bell peppers
  • ½ cup fresh cilantro leaves
  • ¼ cup green onions
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • ½ teaspoon freshly ground black pepper
  • Cooking spray or olive oil for air frying

Instructions
 

  • In a large mixing bowl, combine the cooked rice noodles, shredded carrots, bean sprouts, bell peppers, cilantro, green onions, soy sauce, sesame oil, garlic powder, and black pepper.
  • Fill a shallow dish with warm water and dip one rice paper sheet for 10-15 seconds until soft.
  • Lay the softened sheet flat and place a tablespoon of filling on the lower third.
  • Fold the sides inward and roll tightly from the bottom up.
  • Preheat the air fryer to 375°F (190°C) for 5 minutes.
  • Lightly coat each roll with cooking spray or brush with olive oil.
  • Arrange the rolls in a single layer in the air fryer basket and cook for 8-10 minutes, flipping halfway through.
  • Remove from the air fryer and let cool for a few minutes before serving.
  • Serve warm with dipping sauce.
