Ingredients
  

  • 1 can chickpeas thoroughly drained and rinsed
  • 1 small onion roughly chopped
  • 2-3 cloves garlic finely minced
  • ¼ cup fresh parsley finely chopped
  • ¼ cup fresh cilantro finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 tbsp extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • ½ cup breadcrumbs preferably whole wheat
  • ½ tsp chili powder optional

Instructions
 

  • Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  • In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, black pepper, olive oil, and lemon juice. Pulse until coarsely blended.
  • Transfer the mixture to a bowl and gradually mix in breadcrumbs until cohesive.
  • Shape the mixture into small balls or patties, about 1.5 inches in diameter, and place on the baking sheet.
  • Brush or spray the tops with olive oil for crispiness.
  • Bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
  • Serve warm with tahini sauce, yogurt sauce, or in pita with fresh vegetables.

Notes

For extra crispiness, lightly brush the falafel with olive oil before baking.
