Ingredients
  

  • 1 lb salmon fillet skin removed, diced into bite-sized cubes
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • 1 tsp garlic powder
  • 1 tsp paprika
  • to taste salt and pepper
  • 1 cup cooked jasmine rice
  • 1 cup shredded cabbage
  • ½ cup diced cucumber
  • 1 ripe avocado sliced
  • ¼ cup green onions finely sliced
  • ¼ cup fresh cilantro chopped
  • ½ cup Bang Bang sauce
  • as needed lime wedges

Instructions
 

  • Prepare the coatings by mixing panko breadcrumbs, garlic powder, paprika, salt, and pepper in one bowl, flour in another, and beaten eggs in a third.
  • Coat each salmon cube in flour, then dip in eggs, and finally coat with the panko mixture.
  • Heat oil in a skillet over medium-high heat and fry the salmon bites for 3-4 minutes on each side until golden brown.
  • Remove the salmon from the skillet and place on a paper towel-lined plate to absorb excess oil.
  • In serving bowls, add a base of cooked jasmine rice and top with crispy salmon bites, shredded cabbage, diced cucumber, and avocado slices.
  • Drizzle Bang Bang sauce generously over each bowl.
  • Garnish with sliced green onions and chopped cilantro, and serve lime wedges on the side.
  • Mix gently before eating to combine flavors.
