Ingredients
  

  • 1 pound Brussels sprouts trimmed and halved
  • 1 pound carrots peeled and sliced into thin matchsticks
  • 3 tablespoons extra virgin olive oil
  • ¼ cup pure maple syrup
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon crushed red pepper flakes optional for heat
  • Fresh thyme leaves for garnish optional

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  • In a mixing bowl, combine the halved Brussels sprouts and sliced carrots, then drizzle with olive oil and toss to coat.
  • In a small bowl, whisk together maple syrup, balsamic vinegar, garlic powder, onion powder, sea salt, black pepper, and crushed red pepper flakes.
  • Pour the maple mixture over the vegetables and toss until well-coated.
  • Spread the vegetables in a single layer on the baking sheet, ensuring they are not overcrowded.
  • Roast in the preheated oven for 25-30 minutes, stirring halfway through, until caramelized and crispy.
  • Let the vegetables cool for a few minutes before serving, garnished with fresh thyme leaves if desired.

Notes

For best results, do not overcrowd the baking sheet to ensure crispiness.
