  • 4 cups bread flour
  • 1 tablespoon granulated sugar
  • 2 teaspoons sea salt
  • 1 tablespoon active dry yeast
  • 1 ½ cups warm water
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon barley malt syrup
  • 1 egg egg wash
  • coarse sea salt

Instructions
 

  • Activate the yeast by mixing warm water with sugar and sprinkling yeast on top; let sit until frothy.
  • Combine bread flour and sea salt in a bowl; create a well and add the yeast mixture, stirring until a shaggy dough forms.
  • Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  • Fold in chocolate chips gently to distribute evenly without breaking them.
  • Grease a bowl, place the dough inside, cover, and let rise in a warm spot for about 1 hour until doubled.
  • Punch down the dough, divide into 12 pieces, roll into balls, and poke a hole in the center to shape bagels.
  • Place shaped bagels on a parchment-lined baking sheet, cover loosely, and let rest for 30 minutes.
  • Preheat oven to 425°F (220°C) and bring water to a boil, adding barley malt syrup if using.
  • Boil bagels 2-3 at a time for 1 minute on each side, then remove with a slotted spoon.
  • Brush bagels with egg wash and sprinkle with coarse sea salt if desired.
  • Bake in the preheated oven for 20-25 minutes until golden brown.
