Ingredients
  

  • 4 medium-sized sweet potatoes
  • 2 tablespoons extra virgin olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 8 ounces mushrooms sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt
  • to taste freshly ground black pepper
  • 1 cup cream cheese softened
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup fresh parsley finely chopped

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Rinse and scrub the sweet potatoes, then pierce them with a fork and bake for 45 to 60 minutes until tender.
  • Heat olive oil in a skillet over medium heat, add onion, and sauté until translucent.
  • Stir in garlic and cook for an additional minute.
  • Add sliced mushrooms, thyme, rosemary, salt, and pepper; sauté until mushrooms are browned.
  • In a bowl, mix the mushroom mixture with cream cheese, mozzarella, and half of the Parmesan.
  • Cut baked sweet potatoes in half and scoop out some flesh to create pockets.
  • Fill each sweet potato half with the creamy mushroom filling and top with remaining Parmesan.
  • Bake for an additional 15-20 minutes until golden brown.
  • Garnish with parsley and serve warm.

Notes

For a richer flavor, consider adding a splash of white wine to the mushroom mixture while sautéing.
