  • cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • ½ cup unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • chopped walnuts or pecans optional

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  • Whisk together the flour, sugar, baking powder, salt, and cinnamon in a large bowl.
  • Combine the mashed bananas, melted butter, eggs, and vanilla extract in a separate bowl.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
