Ingredients
  

  • 8 oz pasta
  • 1 pint cherry tomatoes
  • ½ cup crumbled goat cheese
  • ¼ cup olive oil
  • 2 garlic cloves
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • salt and pepper
  • ¼ cup chopped fresh parsley
  • ¼ cup grated Parmesan cheese
  • 2 tbsp balsamic vinegar
  • 1 tsp lemon zest

Instructions
 

  • Cook pasta in boiling salted water until al dente, reserving 1 cup of pasta water before draining.
  • Sauté garlic in olive oil over medium heat for 1-2 minutes until fragrant.
  • Add cherry tomatoes and cook for 3-4 minutes until they start to release their juices.
  • Stir in dried basil and thyme, seasoning with salt and pepper to taste.
  • Combine cooked pasta, cherry tomato mixture, and crumbled goat cheese in a large bowl, adding reserved pasta water if needed.
  • Sprinkle chopped parsley and Parmesan cheese over the pasta and toss to combine.
  • Drizzle balsamic vinegar over the pasta and sprinkle with lemon zest.
