- 3 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 onion
- 2 garlic cloves
- 1 cup mixed vegetables
- 2 cups chicken broth
- 1 teaspoon dried thyme
- Salt and pepper
- 2 tablespoons butter
