Ingredients
  

  • 1 pound boneless skinless chicken breast or thighs
  • 2 tablespoons vegetable oil
  • 1 small onion
  • 2 cloves garlic
  • 1 cup mixed vegetables
  • 2 cups cooked rice noodles
  • 2 teaspoons soy sauce
  • 1 teaspoon oyster sauce
  • 1 teaspoon sesame oil
  • salt and pepper
  • chopped scallions
  • sesame seeds

Instructions
 

  • Cook the rice noodles according to the package instructions and set them aside.
  • Prepare the sauce by whisking together soy sauce, oyster sauce, and sesame oil in a small bowl.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat and cook the chicken until browned and cooked through.
  • Remove the chicken from the skillet and set it aside.
  • Add the remaining 1 tablespoon of vegetable oil to the skillet and stir-fry the sliced onion and minced garlic until the onion is translucent.
  • Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes.
  • Add the cooked chicken back into the skillet and pour in the prepared sauce, stir-frying everything together for about 1 minute.
  • Add the cooked noodles to the skillet and stir-fry for another 2-3 minutes, combining everything together.
  • Season the dish with salt and pepper to taste.
