Ingredients
  

  • 2 medium onions
  • 3 cloves of garlic
  • 2 medium carrots
  • 2 medium potatoes
  • 1 large red bell pepper
  • 2 medium zucchinis
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • ½ teaspoon turmeric powder
  • ½ teaspoon cayenne pepper
  • salt and pepper
  • fresh cilantro

Instructions
 

  • Heat 2 tablespoons of oil in a large pot over medium heat and cook the chopped onions until they are translucent.
  • Add the minced garlic and cook for an additional minute, until fragrant.
  • Add the chopped carrots, potatoes, red bell pepper, and zucchinis and cook for approximately 5 minutes, until the vegetables start to soften.
  • Add the diced tomatoes, vegetable broth, curry powder, cumin, turmeric powder, and cayenne pepper and combine the ingredients well.
  • Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the vegetables are tender.
  • Stir in the coconut milk and let it heat through for a few minutes.
  • Season the soup with salt and pepper to taste.
  • Serve the soup hot, garnished with fresh cilantro.

Notes

You can adjust the level of spiciness to your taste by adding more or less cayenne pepper.
