Ingredients
  

  • 1 large onion
  • 3 cloves of garlic
  • 1 large cauliflower
  • 1 medium butternut squash
  • 2 medium carrots
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • ½ teaspoon turmeric
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 tablespoons olive oil
  • fresh cilantro

Instructions
 

  • Heat 2 tablespoons of olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic, curry powder, cumin, turmeric, paprika, salt, and pepper. Cook for 1-2 minutes, stirring constantly.
  • Add the cauliflower, squash, and carrots. Cook for 5 minutes, stirring occasionally.
  • Pour in 4 cups of vegetable broth and bring to a boil.
  • Reduce heat to low and simmer for 20-25 minutes, or until the vegetables are tender.
  • Use an immersion blender to puree the soup until smooth.
  • Stir in the can of coconut milk and cook for an additional 2-3 minutes.
  • Taste and adjust the seasoning as needed.

Notes

Serve hot, garnished with chopped fresh cilantro.
