Ingredients
  

  • pounds chicken pieces
  • 2 medium-sized squash
  • 2 inches fresh ginger
  • 4 garlic cloves
  • 1 onion
  • 2 cups chicken broth
  • 1 cup water
  • 2 tablespoons fish sauce
  • salt and pepper
  • 2 tablespoons cooking oil
  • 2 lemongrass stalks
  • fresh spinach leaves or chili leaves

Instructions
 

  • Heat 2 tablespoons of oil in a large pot over medium heat and cook the sliced ginger until fragrant.
  • Add the chopped onion to the pot and cook until translucent, about 3-4 minutes.
  • Add the minced garlic and cook for another minute, stirring constantly to prevent burning.
  • Add the chicken pieces to the pot and cook until browned on all sides, about 5-6 minutes.
  • Add the chicken broth, water, fish sauce, salt, and pepper to the pot and bring the mixture to a boil.
  • Reduce the heat to low and simmer the chicken for 20 minutes or until it is cooked through.
  • Add the sliced squash and bruised lemongrass to the pot and simmer for another 10-15 minutes or until the squash is tender.
  • Taste the soup and adjust the seasoning as needed.
  • Serve the Tinolang Manok hot, garnished with fresh spinach leaves or chili leaves.
