  • 1.5 pounds boneless skinless chicken breast or thighs
  • 2 tablespoons olive oil
  • 1 large onion
  • 3 cloves garlic
  • 2 large bell peppers
  • 2 large zucchinis
  • 2 large tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • salt and pepper
  • ¼ teaspoon red pepper flakes
  • fresh parsley
