Instructions
Melt 2 tablespoons of butter in a large pot or Dutch oven over medium heat.
Sauté the diced onion, minced garlic, and diced red bell pepper until the vegetables are tender.
Add the diced potatoes, corn kernels, and flour, and cook for 1-2 minutes, stirring constantly.
Gradually add the chicken broth, whisking continuously to avoid lumps, and bring the mixture to a boil.
Reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender.
Stir in the heavy cream or half-and-half and dried thyme, and season with salt and pepper to taste.
If using cheese, stir it in until melted and well combined.
Serve the chowder hot, garnished with chopped parsley or chives if desired.
