Ingredients
  

  • 1 cup whole wheat flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ½ cup canned pumpkin puree
  • ½ cup softened unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Whisk together the flour, oats, brown sugar, granulated sugar, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
  • Cream the butter and sugars in a large bowl until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla extract.
  • Stir in the pumpkin puree until fully incorporated.
  • Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  • If using nuts, fold them into the dough at this stage.
  • Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving 2 inches of space between each cookie.
  • Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden brown.
  • Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
