Ingredients
  

  • 4 fillets cod
  • to taste sea salt
  • to taste freshly ground black pepper
  • 1 tablespoon extra virgin olive oil
  • 1 cup full-fat coconut milk
  • 1 tablespoon freshly squeezed lemon juice
  • 1 lemon zest
  • 2 cloves garlic
  • 1 teaspoon fresh ginger
  • 1 tablespoon honey or pure maple syrup
  • 1 teaspoon soy sauce
  • 1 tablespoon fresh parsley
  • as needed lemon wedges

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Rinse each cod fillet under cold water and pat dry with paper towels.
  • Season both sides of the fillets with sea salt and black pepper.
  • Arrange the seasoned fillets in a lightly greased baking dish.
  • In a bowl, combine coconut milk, lemon juice, lemon zest, minced garlic, grated ginger, honey or maple syrup, and soy sauce. Whisk until smooth.
  • Pour the sauce over the cod fillets, ensuring they are well coated.
  • Cover the dish with aluminum foil and bake for 15 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the cod flakes easily.
  • Garnish with chopped parsley and serve hot with lemon wedges.
