Ingredients
  

  • 500 g boneless chicken cut into bite-sized pieces
  • 1 cup cornflour
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp soy sauce
  • 1 tsp red chili powder
  • ½ tsp black pepper
  • to taste salt
  • for deep frying oil
  • 1 medium onion thinly sliced
  • 1 medium bell pepper capsicum, cut into strips
  • 2-3 green chilies slit lengthwise
  • 4-5 cloves garlic finely minced
  • 1 inch ginger cut into thin matchsticks
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tbsp chili sauce
  • 1 tbsp tomato ketchup
  • 1 tsp sugar
  • ½ tsp sesame oil
  • for garnish chopped spring onions

Instructions
 

  • Combine chicken with garlic paste, ginger paste, soy sauce, red chili powder, black pepper, and salt in a bowl. Marinate for at least 30 minutes.
  • Whisk cornflour, all-purpose flour, and eggs in a separate bowl to create a thick batter. Dip marinated chicken pieces into the batter.
  • Heat oil in a deep frying pan over medium heat. Fry battered chicken pieces in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels.
  • In another pan, heat a tablespoon of oil. Add onion, bell pepper, green chilies, minced garlic, and julienned ginger. Stir-fry for 2-3 minutes until tender.
  • Whisk together soy sauce, vinegar, chili sauce, tomato ketchup, sugar, and sesame oil in a small bowl. Pour over stir-fried vegetables and toss to coat.
  • Add crispy fried chicken to the pan and gently toss until coated in the sauce and mixed with the vegetables.
  • Cook for an additional 2-3 minutes to meld flavors. Taste and adjust seasoning if needed.
  • Garnish with chopped spring onions before serving.
