Ingredients
  

  • 1 cup cream cheese softened
  • ¼ cup whole milk
  • ¼ cup granulated sugar
  • 2 large eggs separated
  • ½ teaspoon pure vanilla extract
  • ¼ cup all-purpose flour
  • 1 tablespoon cornstarch
  • ¼ teaspoon cream of tartar
  • powdered sugar for dusting optional

Instructions
 

  • Preheat the oven to 320°F (160°C) and prepare a muffin tin with liners.
  • Beat the cream cheese until smooth, then mix in milk, sugar, and vanilla until combined.
  • Incorporate egg yolks one at a time into the cream cheese mixture.
  • Sift flour and cornstarch over the mixture and fold gently until just combined.
  • Whip egg whites with cream of tartar until soft peaks form, then gradually add sugar and whip to stiff peaks.
  • Fold the whipped egg whites into the cream cheese mixture in three additions.
  • Spoon the batter into cupcake liners, filling each about two-thirds full.
  • Bake for 15-20 minutes until lightly golden and a toothpick comes out clean.
  • Cool in the oven with the door slightly cracked for 10 minutes.
  • Remove from the tin and cool completely on a wire rack, dust with powdered sugar if desired.
