Ingredients
  

  • 1 pound boneless skinless chicken breasts
  • ¼ cup soy sauce
  • ¼ cup pineapple juice
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 8 ounces pineapple chunks
  • ¼ cup chopped green onions
  • sesame seeds
  • chopped macadamia nuts

Instructions
 

  • Press the Saute button on the Instant Pot and heat the pot until it reads HOT.
  • Add the chicken to the pot and cook until browned on all sides, about 5 minutes.
  • Remove the chicken from the pot and set aside.
  • Add the soy sauce, pineapple juice, brown sugar, rice vinegar, ginger, garlic powder, pepper, and salt to the pot.
  • Stir to combine, scraping up any browned bits from the bottom of the pot.
  • Add the chicken back to the pot and stir to coat with the sauce.
  • Add the pineapple chunks to the pot.
  • Close the lid of the Instant Pot and set the valve to SEALING.
  • Press the Manual or Pressure Cook button and set the cooking time to 10 minutes at high pressure.
  • Allow the pressure to release naturally for 5 minutes, then quick-release any remaining pressure.
