Ingredients
  

  • 2 pounds beef stew meat
  • 4 cups beef broth
  • 1 large onion
  • 3 cloves garlic
  • 2 medium carrots
  • 2 stalks celery
  • 1 cup pearl barley
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter

Instructions
 

  • Melt the butter in a large pot or Dutch oven over medium heat.
  • Add the chopped onion, carrots, and celery, and cook for about 10 minutes, or until the vegetables are tender.
  • Add the minced garlic to the pot and cook for an additional minute, stirring constantly, until fragrant.
  • Add the beef stew meat to the pot and cook for about 5 minutes, or until browned on all sides.
  • Add the beef broth, pearl barley, dried thyme, salt, and black pepper to the pot. Stir well to combine all the ingredients.
  • Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 1 ½ hours, or until the beef is tender and the barley is cooked.
  • To thicken the soup, stir in the tomato paste and flour.
