Instructions
Melt the butter in a large pot or Dutch oven over medium heat.
Add the chopped onion, carrots, and celery, and cook for about 10 minutes, or until the vegetables are tender.
Add the minced garlic to the pot and cook for an additional minute, stirring constantly, until fragrant.
Add the beef stew meat to the pot and cook for about 5 minutes, or until browned on all sides.
Add the beef broth, pearl barley, dried thyme, salt, and black pepper to the pot. Stir well to combine all the ingredients.
Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 1 ½ hours, or until the beef is tender and the barley is cooked.
To thicken the soup, stir in the tomato paste and flour.
Notes
Serve hot, garnished with fresh herbs if desired.
