Ingredients
  

  • 1 cup quinoa thoroughly rinsed
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 2 medium carrots peeled and diced
  • 2 stalks celery diced
  • 1 medium bell pepper diced
  • 1 medium zucchini diced
  • 1 cup green beans trimmed and chopped
  • 1 can diced tomatoes including their juice
  • 6 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • to taste salt and freshly ground pepper
  • 2 cups fresh spinach or kale roughly chopped
  • 1 fresh lemon juiced
  • for garnish fresh parsley chopped

Instructions
 

  • In a large pot, heat the olive oil over medium heat and sauté the onion until translucent.
  • Add the minced garlic and cook for an additional minute.
  • Incorporate the diced carrots, celery, and bell pepper, sautéing until softened.
  • Add the zucchini and green beans, cooking until just tender.
  • Pour in the diced tomatoes with juice, vegetable broth, and rinsed quinoa; stir to combine.
  • Season with oregano, thyme, smoked paprika, salt, and pepper, then bring to a boil.
  • Reduce heat, cover, and simmer for about 20 minutes until quinoa is fluffy and vegetables are tender.
  • Stir in spinach or kale and cook until wilted.
  • Remove from heat, add lemon juice, and adjust seasoning as needed.
  • Ladle into bowls and garnish with parsley if desired.
