Ingredients
  

  • 1 whole chicken approximately 4-5 lbs
  • 4 tablespoons extra virgin olive oil
  • 6 cloves garlic finely minced
  • 2 tablespoons fresh rosemary finely chopped
  • 2 tablespoons fresh thyme finely chopped
  • 1 tablespoon fresh parsley finely chopped
  • 1 whole lemon zest and juice from half
  • to taste salt
  • to taste freshly ground black pepper
  • 4 large carrots peeled and cut into large chunks
  • 3 medium potatoes peeled and diced into cubes
  • 1 large onion cut into quarters
  • 1 cup low-sodium chicken broth
  • optional fresh herb sprigs for garnish

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Pat the chicken dry and rub with a mixture of olive oil, minced garlic, herbs, lemon zest, salt, and pepper.
  • In a bowl, combine carrots, potatoes, and onion with olive oil, salt, and pepper.
  • Spread the vegetables in a roasting pan and pour chicken broth over them.
  • Place the chicken on top of the vegetables and squeeze lemon juice over it.
  • Roast for approximately 75 minutes until the chicken reaches 165°F (75°C).
  • Baste the chicken halfway through cooking with pan juices.
  • Let the chicken rest for 10-15 minutes before slicing.
  • Serve with roasted vegetables and garnish with fresh herbs.
