Ingredients
  

  • 4 pieces boneless skinless chicken thighs
  • 1 cup BBQ sauce
  • ¼ cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 1 cup corn
  • 1 cup black beans
  • 1 piece bell pepper
  • 1 tablespoon olive oil
  • to taste fresh cilantro
  • to taste lime wedges

Instructions
 

  • In a bowl, whisk together BBQ sauce, honey, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Marinate chicken thighs in the mixture for at least 30 minutes.
  • Heat olive oil in a skillet, add jasmine rice, and toast for 2-3 minutes.
  • Pour chicken broth into the skillet with rice, then stir in corn, black beans, and bell pepper.
  • Place marinated chicken on top of the rice mixture and drizzle with reserved marinade.
  • Cover and simmer on low heat for 25-30 minutes until chicken is cooked through.
  • Fluff rice with a fork and garnish with cilantro.
  • Serve with lime wedges on the side.
