Ingredients
  

  • 2 pieces boneless skinless chicken breasts
  • 3 tablespoons honey
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

  • to taste freshly ground black pepper
  • 1 cup cooked brown rice
  • 1 piece ripe avocado diced
  • 1 small red onion finely chopped
  • 1 cup cherry tomatoes halved
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh cilantro chopped
  • to serve lime wedges

Instructions
 

  • Marinate the chicken by mixing honey, lime juice, lime zest, garlic powder, smoked paprika, salt, and pepper in a bowl.
  • Coat the chicken breasts in the marinade, cover, and refrigerate for at least 30 minutes.
  • Preheat the grill to medium-high heat and grill the chicken for 6-8 minutes on each side until cooked through.
  • Let the chicken rest before slicing it into thin strips.
  • In a bowl, combine cooked brown rice, diced avocado, chopped onion, halved tomatoes, olive oil, salt, and pepper.
  • Gently toss the avocado rice mixture without mashing the avocado.
  • On a serving plate, layer the avocado rice as a base and top with grilled chicken slices.
  • Repeat layering for multiple stacks if desired.
  • Garnish with fresh cilantro and serve with lime wedges.
