Ingredients
  

  • 8 oz preferred pasta
  • 1 cup hummus
  • 1 cup cherry tomatoes
  • 1 cup fresh spinach
  • ½ cup olives
  • 2 cloves garlic
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground pepper
  • Fresh basil or parsley leaves
  • Red pepper flakes optional

Instructions
 

  • Cook the pasta in salted boiling water until al dente, reserving ½ cup of cooking water before draining.
  • In a skillet, heat olive oil over medium heat and sauté minced garlic for 1 minute.
  • Add halved cherry tomatoes and cook for 3-4 minutes until softened.
  • Stir in chopped spinach and sliced olives, cooking until spinach wilts.
  • Reduce heat to low, add cooked pasta, hummus, and lemon juice, mixing well.
  • If too thick, add reserved pasta water gradually until creamy.
  • Season with salt, pepper, and red pepper flakes to taste.
  • Serve in bowls, garnished with basil or parsley and a drizzle of olive oil.

Notes

For a spicier version, add more red pepper flakes.
